Roasted Garlic Sausage & White Wine Pasta

In my humble opinion, pasta is always a good idea! This is such a yummy meal and so easy to make! It’s quickly become a favorite in our house. I probably make it at least once a week. Made with the most delicious Roasted Garlic Chicken Sausage from Trader Joe's, this is a simple but super flavorful dish that is sure to satisfy everyone.

Ingredients

12 oz gluten-free fusilli or any pasta of choice

12 oz chicken sausage, sliced into rounds, See Recipe Notes

1 tablespoon olive oil

4 tablespoons unsalted butter

2-3 tablespoons minced garlic

1 tablespoon Italian seasoning

1/4 cup dry white wine

1 cup heavy cream, room temperature

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried parsley

1/4  teaspoon red pepper flakes, optional

1/2 teaspoon black pepper

a pinch of nutmeg

salt to taste

1 cup finely grated parmigiano reggiano

1/4 cup pasta water


Directions

  1. In a large skillet heat 1 tablespoon of olive oil. Once hot add in the sausage. Cook the sausage over medium heat, moving them around often until it is nicely browned on both sides. Remove from the skillet and set aside.

  2. In the same skillet, melt the butter over medium heat. Once it has melted add in the minced garlic. Allow the garlic to cook for a few minutes then add in the Italian seasoning. When the garlic starts to turn golden brown pour in the white wine and turn the heat down to a simmer.

  3. Gradually pour in the heavy cream, then add the garlic powder, onion powder, dried parsley, red pepper flakes, nutmeg, black pepper and salt.

  4. Sprinkle in the parmesan, gently whisk the sauce until smooth. Allow the sauce to return to a simmer to thicken while you prepare the pasta.

  5. Cook the pasta according to the package instructions, removing from the heat just before al dente. Reserve about 1/4 cup of pasta water and then drain.

  6. Add the cooked pasta to the sauce and toss to combine. If the sauce is too thick add in some of the pasta water to loosen it up a bit. Add the sausage back in and toss again to combine. Serve garnished with fresh parsley and plenty of grated parmesan.


Notes

  • I used Trader Joe’s brand Roasted Garlic Chicken Sausage, feel free to swap this for any chicken sausage of choice. For best results, I do recommend using a chicken sausage without any casing.
