Crispy Bean & Cheese Sheet Pan Tacos

These gluten-free sheet pan tacos are so easy to make and can be ready to devour in about 40 minutes! They are super customizable and can be loaded with all the delicious toppings your taco loving heart desires. Paired with a bright and zesty Lime Crema these make for the most perfect weeknight dinner as we head into summer!

Ingredients

For the Garlic Lime Crema

1/2 cup sour cream

zest of one lime

juice of one lime, freshly squeezed

2 teaspoons minced garlic

salt to taste

For Brushing the Tortillas

1/4 cup olive or avocado oil

1 tablespoon adobo seasoning, See Recipe Notes

For the Tacos

1 pound ground turkey or beef

1 packet gluten-free taco seasoning

1 can ranchero style refried beans

1 cup monterey jack or cheddar, shredded

4-6 gluten-free tortillas, See Recipe Notes

Optional Toppings

diced onions

diced tomatoes

avocado or guacamole

salsa

corn

diced jalapeños

shredded lettuce


Directions

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper or foil.

  2. In a skillet over medium heat, cook your protein of choice then add in the taco seasoning according to the package instructions. Once done, remove from the heat and let cool slightly.

  3. Mix together the oil and adobo seasoning in a small bowl. Brush one side of each tortilla thoroughly with the oil and place them oil side down onto the baking sheet.

  4. To assemble the tacos`begin by sprinkling one half of each open faced tortilla with a handful of shredded cheese. Top the cheese with a few generous spoonfuls of the taco meat.

  5. Lastly, spread a layer of refried beans on the opposite half of each tortilla and fold the tortillas in half pressing gently to keep the halves closed together.

  6. Bake the tacos in the preheated oven for 20 minutes, flipping halfway through the baking time so both sides of the tacos get golden brown and crispy.

  7. While the tacos bake prepare the garlic lime crema by mixing together the sour cream, lime zest, lime juice and minced garlic in a small bowl. Season to taste with salt and set aside until ready to serve.

  8. Once the tacos are done baking remove them from the oven and transfer them to a wire rack to cool slightly before adding your toppings of choice. Serve and enjoy!


Notes

  • If you can’t find the adobo seasoning you can omit it or easily make your own at home! I recommend this recipe.

  • My favorite brands of gluten-free tortillas are Siete, Rudi’s and Maria & Ricardos.
