Sweet & Spicy Peanut Udon Noodles
These Sweet & Spicy Garlic Peanut Udon Noodles are a super quick and easy dish! This is one of my favorites when I want to switch up my basic everyday go-to meals. They are deliciously saucy and the perfect combo of sweet and spicy flavors. I like to add leftover chicken to the sauce for some protein but you can totally customize this recipe to fit your preference!

Ingredients
8 oz package Lotus Foods Brown Rice Udon Noodles
1 tablespoon sesame oil
2-3 teaspoons chili garlic sauce, See Recipe Notes
1/4 cup tamari (gluten-free soy sauce)
5 tablespoons dark brown sugar
2 tablespoons peanut butter
1 tablespoon minced garlic
1 teaspoon grated ginger
2 teaspoons bachan’s gluten-free japanese barbecue sauce, optional
Directions
Prepare noodles according to package instructions. While the noodles cook, prepare your sauce.
To make the sauce, in a small bowl whisk together the sesame oil, peanut butter, chili garlic sauce, tamari and brown sugar until well combined.
In a large skillet over medium heat, saute the minced garlic and freshly grated ginger with the optional japanese barbecue sauce. Set aside.
Once the garlic and ginger begin to turn golden brown pour in the sauce. Lower the heat and allow the sauce to simmer for about 5 minutes till it thickens slightly.
Drain your cooked Udon noodles and add them to the pan with the sauce. Using tongs, toss the noodles in the sauce to coat them completely.
Add your optional protein of choice and serve topped with chopped peanuts and sesame seeds.
Notes
I use Huy Fong Foods chili garlic sauce. Can be substituted for Sriracha.
