Loaded Breakfast Bowls

This Gluten-Free Loaded Savory Breakfast Bowl is everything you could ever want! Packed with sautéed fresh spinach and mushrooms with onion, crispy hashbrown bites, avocado, bacon, roasted tomatoes and a fried sunny-side egg! It’s the perfect hearty meal to start the day!

Ingredients

For the Roasted Tomatoes

1 heaping cup cherry tomatoes

olive oil

salt and pepper to taste

For the Sautéed Spinach & Mushrooms

3-4 slices of bacon, diced

about 4 oz baby bella mushrooms, sliced

1/4 of a medium sweet onion, diced

8 oz fresh baby spinach

1/2 teaspoon black pepper, or to taste

1/4 red pepper flakes, optional

salt to taste

freshly grated parmesan, for serving

For the Bowl

1 large egg, fried or poached

mini hash browns

1/2 of an avocado, sliced

everything bagel seasoning, optional


Directions

For the Roasted Tomatoes

  1. Preheat the oven to 400°F. In a small baking dish add the tomatoes in single layer. Drizzle them with olive oil and season to taste with salt and pepper.

  2. Roast in the oven for about 10-15 minutes until softened and slightly charred.

For the Sautéed Spinach & Mushrooms

  1. In a medium sized nonstick skillet over medium heat, cook the diced bacon pieces. Once cooked, remove the bacon from the pan and set aside on a paper towel lined plate to drain off the excess grease. Reserve the bacon fat in the skillet.

  2. In the same skillet sauté the mushrooms and onions in the reserved bacon fat over medium heat for about 5 minutes, until they begin to soften and brown lightly.

  3. Gradually add in the spinach, one handful at a time. Allow it to wilt down and toss it together with the onions and mushrooms. Once all the spinach has wilted season with red pepper flakes, salt and pepper then remove the skillet from the heat

To Assemble the Bowl

  1. To a large bowl or plate add the sautéed spinach and mushrooms, roasted tomatoes, chopped bacon, hash browns and sliced avocado. Top with the fried or poached egg, freshly grated parmesan and season to taste as desired.
