Quick & Easy Yaki Udon
This recipe has quickly earned a spot on my list of go-to dishes. It’s super simple to make and so yummy! You can totally make this recipe your own by swapping out the protein or adding different veggies! It’s dairy free and can easily be made vegan. Best of all it can be ready to devour in about 30 minutes!

Ingredients
8 oz package gluten-free Udon Noodles
3 tablespoons vegetable or olive oil
5 large eggs, seasoned & whisked
1/2 of a sweet onion, sliced into slivers
1 cup sliced shiitake mushrooms, optional
4 scallions, chopped into 1 inch segments
1-2 tablespoons minced garlic
a generous pinch of white pepper
salt to taste
finely sliced scallions, for topping
crushed peanuts, for topping, optional
sesame seeds, for topping, optional
For The Sauce
2 tablespoons dark brown sugar
2 tablespoons gluten-free soy sauce
1 tablespoon oyster sauce
1 tablespoon rice wine vinegar
1 tablespoon Japanese Barbecue Sauce
1-2 teaspoons chili garlic sauce
Directions
In a small bowl, whisk together all the sauce ingredients until well combined and then set aside.
Cook your udon noodles according to the package instructions. Drain and then rinse them with cold water. Toss the noodles with a little oil to prevent them from sticking together and set aside.
In a large skillet or wok, heat 1 tablespoon of oil, add in the whisked eggs and scramble them together over medium heat until just cooked. Remove the eggs from the pan and set aside.
In the same pan, heat the remaining 2 tablespoons of oil over medium-high heat. Add the onions and mushrooms, stir fry them for about 3-5 minutes until they begin to soften and brown.
Lower the heat to medium and add in the green onions and cook for about a minute, until the green onion starts to wilt down a bit. Then, add the eggs back in along with the noodles.
Stir fry for a few more minutes while tossing everything together gently to combine. Toss in the minced garlic and season to taste with the white pepper and salt.
Pour the sauce over the noodles and toss everything together again so the noodles are evenly coated. Serve garnished with green onions, sesame seeds and crushed peanuts.
