Caramelized Onion & Goat Cheese Mashed Potatoes

Mashed potatoes are an essential holiday dinner side dish in my house and these Caramelized Onion & Goat Cheese Mashed Potatoes are guaranteed to knock your socks off! They are perfectly creamy and cheesy, with plenty of butter and a touch of sweetness from the caramelized onions. A potato lovers dream!

Ingredients

For the Caramelized Onions

3 large sweet onions, thinly sliced

2 tablespoons unsalted butter

2 tablespoons olive oil

3 tablespoons dark brown sugar

2 tablespoons balsamic vinegar

salt + pepper to taste

For the Mashed Potatoes

3 lbs yukon gold potatoes, quartered

1/2 cup salted butter

2 tablespoons minced garlic

1 tablespoon fresh thyme leaves

2 cups heavy cream, plus more if needed

1/2 teaspoon dried parsley

a pinch of dried nutmeg

8 oz goat cheese

1/2 cup finely grated parmesan

salt and pepper to taste


Directions

  1. In a large deep skillet heat the butter and olive oil over medium heat. Add in the sliced onions and brown sugar, tossing to combine. Allow the onions to slowly cook over medium-low heat, stirring occasionally, for about 45-50 minutes until they are richly browned and jammy. Stir in the balsamic vinegar, season to taste with salt and pepper, then transfer the onions to bowl and set aside.

  2. Throughly wash then chop your potatoes and transfer them to a stock pot. Cover them with cold water and salt the water generously. Place the pot over medium-high heat and allow the potatoes to come to a boil. Boil until they are fork tender, about 10-15 minutes. Remove from the heat and drain the potatoes, then return them to the still warm pot to steam off the remaining moisture.

  3. Meanwhile, melt the butter in a small saucepan or skillet. Add in the minced garlic and thyme leaves. Allow them to sauté for just a few minutes before whisking in the heavy cream and the dried spices. Let the cream come to a simmer for a few minutes while whisking continuously.

  4. Pour the hot cream mixture into the pot with the potatoes and mash them using a potato masher or hand mixer. Once the potatoes are smooth, fold in the cheeses followed by the caramelized onions and season to taste with salt and pepper. Serve the mashed potatoes immediately, topped with warm melted butter and fresh thyme leaves.
