Caramelized Balsamic Onion & Roasted Garlic Bread

This extra elevated flavor packed gluten-free bread is made with sweet balsamic caramelized onions, savory herbs, fresh basil and plenty of roasted garlic. And of course we can’t forget the freshly grated parmesan and asiago. I can honestly say I will only be making my garlic bread like this from now on!

Prep Time : 1 hour + 15 minutes

Bake Time : 12 minutes


Ingredients

2 large garlic heads

1 sweet onion, sliced thin

2-3 tablespoons olive oil or butter

1 teaspoon brown sugar

1 tablespoon balsamic vinegar

1/2 cup salted butter, softened

1/4 cup fresh basil, finely chopped

1/2 teaspoon oregano

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon dried parsley

a pinch of red pepper flakes

salt and pepper to taste

1 gluten-free baguette

1/4 cup freshly grated parmigiano

1/4 cup freshly grated asiago


Directions

  1. Preheat the oven to 400°F. Cut the tops off of the heads of garlic, drizzle them generously with olive oil and season them with salt and pepper. Wrap them in foil and place them in the oven to roast for 1 hour. Meanwhile prepare the onions.

  2. In a medium skillet over medium-low heat, heat the oil or butter. Add the sliced onions to the pan along with the brown sugar, stirring to combine. Reduce the heat to low and allow the onions to caramelize, stirring occasionally, for about 50 minutes until jammy. Pour over the balsamic vinegar and remove from the heat.

  3. Once the garlic has finished roasting, remove it from the oven, raise the oven temperature to 425°F and line a baking sheet with parchment paper.

  4. In a small bowl, mix together the caramelized onions and the softened butter with a fork then squeeze out the roasted garlic cloves into the bowl. Mash everything together until well combined.

  5. Stir in the fresh basil along with the other dried spices. Cut a baguette loaf in half lengthwise and spread the mixture evenly on each open facing side. Making sure to coat the bread generously.

  6. Place onto the prepared baking sheet and top with the grated parmesan and asiago. Bake in the oven for about 8-10 minutes until the bread is golden brown and the cheese is bubbly. For extra crispy bread, broil for the last couple minutes of baking time.

  7. Remove the finished garlic bread from the oven, top with more freshly grated parmesan if desired and serve warm.
